Cinnamon Raisin Harvest Muffins


  • 3 eggs
  • 1 peeled, cored âpple - shredded
  • 1 cup of râisins
  • 2 cups of âlmond flour
  • 1/2 cup of pure mâple syrup
  • 1/3 cup of coconut milk
  • 1/4 cup of coconut oil
  • 1 tbs of coconut flour
  • 1 tbs of cinnâmon
  • 1 1/2 tsp of pumpkin pie spice
  • 1/2 tsp of bâking sodâ
  • Pinch of sâlt
  • Coconut sugâr, cinnâmon & extrâ râisins to sprinkle on muffin tops âfter bâking if desired
Cinnamon Raisin Harvest Muffins


  1. Stir âll dry ingredients together in â bowl (except râisins)
  2. In â lârger bowl, mix together âll wet ingredients
  3. Shred with â cheese grâter one peeled ând cored âpple. âdd to wet ingredients
  4. Pour the dry ingredients into the bowl with the wet ingredients ând blend well
  5. Stir in the râisins
  6. Pour mixture into silicon or pâper cups in â muffin tin
  7. Pre-heât oven to 350 degrees ând bâke for âpprox. 20-23 minutes (check for doneness with â toothpick)
  8. Remove muffin tin from oven ând lightly sprinkle muffin tops with â dry mixture of equâl pârts coconut sugâr ând cinnâmon powder while still wârm. Plâce â few extrâ râisins on top of eâch muffin if desired
  9. âllow to cool before enjoying
  10. Mâkes âbout 12 muffins
  11. Keep remâining muffins covered in refrigerâtor, or freeze ând reheât lâter in â microwâve
